Honey has been consumed by humans for thousands of years. For some reason, a long time ago, some guy went up to a beehive and decided to steal the sticky golden slime that the bees were producing and storing.

The delicious reward for this endeavor was a sweet and gooey substance that we now call honey.

That’s raw, organic, honey. It’s raw since it was not pasteurized or processed. It’s organic, as the flowers that the bees took the pollen from were not grown using pesticides, fertilizers, or any other chemicals.

Fast forward to today, honey has been transformed to mean something else entirely.

The processed honey industry has taken control of the whole ecosystem.
Flowers, bees, and hives are grown in controlled environments, often using pesticides, fertilizers, and other chemicals.

But it doesn’t stop there. Once harvested, the honey is heated for a period of 30 minutes, which is known as pasteurization, thus killing all the yeast cells, plus a bunch of important enzymes, antioxidants, minerals, and helpful compounds.

It is then filtered through a very fine filter that removes most pollen. This is called ultra-refined honey.

The resulting paste is often watered down, mixed with some other conservatives, and packed, finally making its way to your kitchen.

This type of honey is a far cry from the raw organic unfiltered honey that we’ve been eating for thousands of years.

We’d go so far as to consider it something entirely different – some kind of sugar paste disguised as honey.

In fact, a study by Food Safety News recently concluded that three-fourths of grocery store sold honey doesn’t even contain pollen!

Raw Organic Honey vs Regular Honey

If the previous section wasn’t enough to convince you to stay away from processed honey, you really ought to know the health benefits of eating processed honey vs consuming raw organic unprocessed honey.

The first major difference between these two types of honey is that “regular” honey is pasteurized and/or refined.
In the refinement and pasteurization process, a lot of the key minerals, flavonoids, antioxidants, and enzymes are lost.

Glucose oxidase, for example, is an enzyme that when combined with water produces hydrogen peroxide, which has strong antibacterial properties.
This enzyme, however, cannot resist the high temperatures of pasteurization and is thus eliminated in this process, remaining present only in raw organic unpasteurized honey.

Furthermore, according to a 2006 study, raw honey contains more than 4 times the amount of antioxidants than processed honey.
These antioxidants boost the immune system and keep your cardiovascular system in good health.

And finally, pasteurizing honey eliminates most digestion-facilitating enzymes.
Honey has been used as a natural digestion booster for centuries but heating it up for long periods of time counters this property by eliminating these enzymes.

There are too many studies on the lost nutrients and minerals resulting from the refinement and conservation process of honey to mention in a single article, but the verdict amongst academics seems to be clear: refining and pasteurizing raw honey doesn’t seem to bring any health benefits.

Before the advent of science and lab tests, our ancestors used honey to treat wounds, boils, and burns. That said, both Manuka honey from Australia and those from New Zealand may vary slightly because of factors like the method of extraction.   

Where it is produced is not its only distinguishing factor. The nectar of the flowers of the Manuka bush gives it its distinct non-peroxide activity properties. Like we said earlier, the Manuka is believed to be more potent than other types of honey because it has active compounds that are responsible for its stronger antibacterial properties. Dihydroxyacetone (DHA), Methylglyoxal (MGO), and Leptosperin are the key compounds present in the Manuka that give it its unique antibacterial properties. 

Since several factors can affect the potency of this naturally occurring substance, the Manuka inclusive, honey producers created a scale which they use to rate its potency. This rating is known as the ULF rating. The rating reflects the concentration of the three key compounds we mentioned earlier.

Health Benefits of Manuka Honey

The following are some of the health benefits of the Manuka:

Helps Wound to Heal Faster

As mentioned earlier, our ancestors used honey to treat wounds sores, boils, and burns. Today, it is still used effectively for such. In fact, in 2007, the United States Food and Drug Administration (FDA) approved the use of Manuka honey for wound treatment. 

Aside from the antioxidant and antibacterial properties it offers, its use keeps the wound moist which prevents microbial infections. Several studies have revealed that this honey amplifies the regeneration of tissue, thereby enhancing the healing of wounds. They also show that it even decreases damage from burns. 

For instance, one study was carried out for two weeks on 40 participants who had non-healing wounds. It aimed to investigate the effects of the substance on their wounds. The results of the study revealed that an impressive 88% of the wounds decreased in size. Also, it created an acidic wound environment which is known to favour healing.  

Treatment of Sore Throat

The Manuka honey may be effective in the treatment of a sore throat. Its antibacterial and antiviral properties can kill off the bacteria that cause the pain and reduce inflammation, thereby soothing the sore throat. You will find it interesting to know that it not only attacks the bacteria responsible for the discomfort but that it also soothes the pain by coating the inner lining of the throat.  

A study done on patients receiving chemotherapy for head and neck cancer aimed to observe the effects of Manuka honey consumption on Streptococcus mutans, a certain type of bacteria that causes sore throats. The scientists found that the number of Streptococcus mutans decreased significantly after the patients began consuming it.

Unfortunately, with the advent of antibiotics, honey has been touted as “worthless.” That being said, people are now starting to look for alternatives to pharmacological medicines since the current growing resistance to antibiotics is on the rise.

The growing popularity of honey is no surprise. New Zealand Manuka honey is one of the most powerful medicinal honeys in the world. Manuka honey contains Methylglyoxal (MGO). MGO is a chemical compound that inhibits bacterial growth and helps reduce inflammation. Manuka honey also contains other compounds and enzymes that can help protect from viruses and boost our immune system to prevent future infections.

It was in the 1980s when Professor Peter Molan of Waikato University, New Zealand, reported an extraordinary activity of Manuka honey. The compound responsible for the antimicrobial activity remained a mystery until 2008 where two independent laboratories discovered MGO. Alongside MGO (methylglyoxal), “non-peroxide activity” or NPA is what makes Manuka honey so potent in fighting off bacteria.

Leptospernum Scoparium

It was concluded that the nectar of flowers of Leptospermum scoparium (native to New Zealand) contains high amounts of MGO. Specifically, darker Manuka honey contains high amounts of phenolic compounds that have potent antimicrobial activity.

Several research studies have found the MGO in Manuka honey is effective at inhibiting flu viruses, including the H1N1 swine flu. It is not just the Manuka honey on its own that makes a difference. More importantly, when it is combined with other antiviral and antibacterial therapies it makes them work even better.

Although much of the research has been done on applying Manuka honey to the skin, there is increasing evidence that shows the benefits of Manuka honey taken internally as well, such as for combatting breathing problems or digestive disorders such as IBS.

According to this study, Manuka honey disrupts a wide range of problematic pathogens, including Streptococcus and Staphylococcus species, Pseudomonas aeruginosa, Escherichia coli, Proteus mirabilis, Enterobacter cloacae, Acinetobacter baumannii, and Klebsiella pneumonia.

Step by Step Instructions

Step 1

Preheat the oven to 180 degrees.

Spread the nuts on a baking sheet and cook in the oven for 10 minutes. Cool for 10 minutes and chop them up.

Step 2

In a large bowl mix oats, liquid coconut oil, Manuka honey and chopped nuts.

Step 3

Line a regular-sized pan with cooking paper and make sure the sides of the pan are covered with the paper.

Next, empty the bowl into the pan, spread evenly and pack in firmly.

Bake for 20 minutes until the granola turns golden and smells like honey.

Let it cool for 5 minutes before taking out of the oven.

Preheat oven to 170°C and line a cookie sheet with baking paper.

Place the fennel seeds and fenugreek in a dry pan for a few minutes over medium heat.
