- 2 tsp of fenugreek
- 2 tbsp of Manuka honey
- 1/3 cup of melted coconut oil
- 1 egg
- 1 banana
- 1 tsp of vanilla extract
- 1 tsp of ground ginger
- 3 cups of rolled oats
- 2 tbsp of peanut butter

Step by Step Instructions
Preheat oven to 170°C and line a cookie sheet with baking paper.
Place the fennel seeds and fenugreek in a dry pan for a few minutes over medium heat.
Use a blender to grind into a powder.
Place all ingredients in a blender, running till the dough is mixed evenly.
You may need to stop and scrape down the sides with a spatula a few times.
The mixture will be very sticky and heavy.
Use slightly wet hands to form small balls and place them on the baking sheet.
Bake for 15 minutes.
Place the cookies on the upper level in the oven.
Keep a close eye on the cookies as they like to burn fast.
Remove the tray from the oven and let the cookies cool for 5 minutes.
Bake the next batch.
